Keep your eyes on Rose Cahatol, because she’s making moves. Her 10-year plan? Opening a local Filipino-American fusion restaurant. She anticipates using her background in the food and beverage industry to run the restaurant one day.

Cahatol is currently the operations manager for The Still at The Mirage. Before her current job, she got into the industry as a server and then moved into bartending, where she worked for seven years at local spots. In early 2023 she got on the management track, and now she runs day-to-day operations at The Still. “I make sure the experience that we curate for the guests is a positive one,” she says. “I think that one of my strengths is that I was front of house not that long ago, so I know what it feels like to be in the weeds and need help.”

Cahatol loves her current position and enjoys introducing people to The Still and welcoming back returning guests. “We’re an elevated sports bar,” she says. “We’re the ultimate man cave. We have 27 TVs. We have upwards of 50 craft beers. We have local drafts, too. We show all the sports—March Madness, Super Bowl, UFC. You can watch sports anywhere, but I feel we have the best environment. The staff is super friendly—nice, personable people. I feel like we curate a very fun vibe.”

It’s her experience and hard work in promoting the popular environment at The Still that will help aid her in opening her own restaurant one day, she says. “That’s the plan.”

Libation: Golden Boy

One sip of this sweet, slightly spicy specialty cocktail and you’ll understand why it’s been a guest favorite at The Still for a while now. The Golden Boy is a mix of Casamigos blanco tequila, passion fruit purée, muddled Fresno chilis, lime juice and agave. It’s served with a cinnamon sugar rim.
