The 1988 movie Cocktail inspired many a burgeoning bartender, including Stephen Roehm, assistant general manager and beverage director for Cabo Wabo Cantina at Miracle Mile Shops.

After bartending for a short while in San Diego while he was attending college, “Somewhere along the way I saw the movie Cocktail and was like, ‘I want to do that!’ he said. “So, I moved to St. Thomas and bartended for two-and-a-half years.”

After getting island fever, he said, he moved to Las Vegas in 2006. Over the years, he split his resume between bartending and managing at various spots on the off the Strip and, nine years ago, he joined Cabo Wabo Cantina.

“Now I help build the cocktail menu, keep up on the latest cocktail and spirits trends, work with pricing for products and vendors, and assist our managers out on the floor,” Roehm said.

After so many years with the bar and restaurant, Roehm still loves his job, he said. “I love the people I work with. I love that I meet people from all over the world. I love that I’m never stuck in an office and cubicle. It’s just fun and changes every single day. We’re on the Las Vegas Strip and we’re a bar and restaurant owned by a rock star!”

The rock star that Roehm is referring to is Sammy Hagar, and guests of Cabo Wabo Cantina can pick up on the Red Rocker’s vibe the moment you step through the doors. “Margaritas are our backbone,” Roehm said. “Sammy said that killer margaritas were going to be the standard of Cabo Wabo.” And they are—we dare you to find a recipe you don’t like!

Libation: Cocorita

A lot of Cabo Wabo Cantina’s margaritas feature Sammy Hagar’s own line of tequila, like the Cocorita. The coconut-inspired margarita is a blend of Sammy Hagar’s Santo blanco tequila, fresh lime juice, triple sec, coconut cream, and sweet and sour. The margarita is then garnished with lime and a rim of toasted coconut flakes.

Benefit: They don’t take reservations for it but ask for the best table on the patio with killer views of the Strip, Table 114.
