That cocktail you’re enjoying at, say, Cathédrale at Aria or Stanton Social at Caesars Palace? You can thank Jan Padiernos, director of beverage for Tao Group (Tao Group operates some of the most popular restaurants, nightclubs and dayclubs in town).

Padiernos has been with the company for more than a decade, starting out as a bartender before switching over to the management side; she earned her current title a year and a half ago. “It was a new opportunity to use a new skill set,” she says. …“It can be overwhelming and challenging at times just because of the scope of the position, but at the same time it’s fulfilling and satisfying, especially after you see your hard work go from conception to creation,” Padiernos says.

In the past year she’s helped open three new restaurants in Las Vegas, including Cathédrale, Tao’s French-Mediterranean upscale restaurant, where we sat down for this interview and photo shoot. It’s Padiernos’ job to create the cocktail programs at Tao Group’s many venues around town, as well as revamp existing menus.

And for the new year, this boss lady looks forward to applying everything she’s learned in her latest role and making 2024 even more successful. “I’ve been with Tao Group for so long, it’s a testament to them,” she says. “They’ve always championed my development. One of my mentors told me, ‘If we can leave the beverage program a little better than where we found it then we’ve done our job.’ I think about that each day.”

Libation: The Quaternary

All eyes at Cathédrale will be on your table when you order The Quaternary. This signature cocktail is a mix of Ketel One vodka, Plymouth gin, Dolin dry vermouth and orange bitters, served with Castelvetrano olives and a spoon of Kaluga caviar. The cocktail sits atop a giant block of ice, keeping it nice and chilled.
