There’s no end to the surprises that await you at FUHU at Resorts World Las Vegas. While it specializes in contemporary Asian cuisine, there is literally something here for everyone—and that includes vegetarians and vegans!

Head into the Pan-Asian restaurant for Saturday brunch from noon-3 p.m. and score dishes like ube pancakes, pictured, a snow crab omelet, Hainese chicken rice and the FUHU prime short rib Benedict, benefiting from a red vinegar hollandaise sauce. The beef tenderloin sando is built on soft Japanese milk bread with katsu sauce, with fingerling potato chips. There are also dim sum selections. And champagne! What would brunch be without champagne?

For dinner, enjoy specialty cocktails like the Fallen Embers, a smoked Old-Fashioned with Hinotori’s 5-year whiskey, Amaro Montenegro and sweet vermouth.

Labor-intensive items like the signature FUHU Aromatic Crispy Duck make flavorful appearances. How labor intensive? FUHU executive chef Justin Kalaluhi said in a Las Vegas Magazine interview, “…it’s a three-day process. We basically fabricate the duck, and we salt it for a whole day. And then we rinse it and we put a dry-wet rub on there and it sits on there for 24 hours as well. Then we braise it for two hours and then cool down, and then the next process it’ll be picked up (then finished) in the fire.”

Other amazing dishes that grace dinner service include such items as FUHU sticky lamb chops, vegan “butter chicken,” king crab tempura, specialty sashimi and rolls, fish curry with yellowtail, kimchi fried rice, duck fried rice, and spicy duck noodles.

And the desserts are something you won’t find at an average place—indulge in banana cake with caramelized bananas, rum caramel sauce, toasted walnut and crème fraîche ice cream, or pandan gateau, a cake with coconut crema, roasted rum compote and raspberry sauce. For real decadence, the list of spirits features several that call out, like Moutai baijiu, Hibiki Harmony whiskey and Nikka Coffey Grain whiskey, as well as other items from across the globe.
