Indulge yourself with a trip to the Foundation Room at Mandalay Bay, where the cushy seating and wood walls on the 63rd floor are accented by overhead chandeliers. Foundation Room (a sister venue of House of Blues) recently announced new items on the menu for both lounge and restaurant, and they’re sure to whet your appetite. 

Start in the lounge with a specialty cocktail and a tasty bite, like adobo chicken wings, a lobster roll, fries and papas bravas, served with a smoked paprika aioli. If you can, head out to the patio to capture some incredible views of the Las Vegas Strip.

Then proceed to the dining room, where soon-to-be favorites include crispy pork belly with papaya salad, French onion soup, roasted bone marrow served with peppercorn sauce, and a shareable shellfish platter with crab, jumbo shrimp, lobster salad and oysters. Mains like the 10-ounce rib cap, braised short rib, and a 10-ounce Tabasco-rubbed skirt steak are sure to tickle your fancy. Add on pan-seared scallops or Brussels sprouts with a bordelaise sauce and Duroc bacon to cap it off. 

If you’re vegetarian, the vegan risotto, with jackfruit confit and mushrooms, makes a hearty supper.  

I always recommend dessert, and there are some delicious ones, like the butterscotch crème brûlée served with butterscotch cotton candy. And say yes to that after-dinner coffee!
