But if your Sin City wish list includes authentic Chinese, Japanese, Vietnamese and Thai, you might assume you’d have a lot of driving to do. Well, put the gas card away. At 8 Noodle Bar, chef Andy Vu offers all of the above—and they’re all amazing.

The pleasant, welcoming setting at Red Rock Resort mixes the traditional with the eclectic, and everything is made using the freshest ingredients under Vu’s watchful, critical eye.

You can go conventional on appetizers with spring rolls and edamame, or try something different like shrimp toast, made with rock shrimp, a fried egg, scallions, water chestnuts and eel sauce, or the mochiko chicken, crispy with sticky garlic ginger sauce. Noodle fans will find both noodle soups and noodle bowls, including pad Thai and buckwheat soba, with a heady mix of white soy, yuzu and cucumbers.

And fans of bao (steamed buns) should not sleep on the options here, including beef short rib, duck and pork belly.
